Ingredients
See picture above for example of “shredded” prep.
- 3/4 lb of pork loin, shredded
- wood ears, shredded (if available, they come dry and need to soak for 30 min)
- 6 water chestnut; sliced and shredded
- 1-2 sweet green and/or red peppers, shredded
- 1 tsp garlic, diced
- 1 tsp ginger, diced
- 1-2 scallions, chopped for garnish
Sauce
- 1.5 tbs soy sauce
- 1.5 tbs chinese vinegar
- 1.5 tbs wine
- 1 tbs Chinese hot chili paste, or Sriracha sauce
- 2 tsp sugar
- a few pinches of white pepper
Instructions
- Heat some oil in a pan and stir fry pork until white
- Drain and leave oil and drippings in wok
- Stir fry veggies until mostly cooked (~3 mins)
- Return pork and add sauce
- Stir fry another minute until everything mixed
- Garnish with scallion and serve
